Blue Bianca is a distinctive coffee from the Onang Ganjang highlands, grown by smallholders and processed by a young local producer in Dolok Sangul. Cherries are pulped, briefly fermented, and wet-hulled using Sumatra’s unique Giling Basa method. After careful drying, sorting, and a 30-day rest, the result is a vibrant, character-rich coffee that exemplifies top-tier Indonesian quality.

This was really enjoyable as a pourover, it was my go-to coffee throughout the week or so while it lasted. I got purple grape and brown sugar sweetness - flavours I'd normally associate with Rwandan coffee. I gather this might have been a challenging one to roast so I think you did a great job! I'm always keen to try less common varietals, and I appreciate the diversity of producers among your line-up. :-)
